* 1-1/4 cups Greek extra virgin olive oil
* 2 onions
* 2 carrots
* 2 celery stalks
* 2 cloves garlic
* 2 tbsp. tomato paste
* 14 oz diced tomatoes
* Water as required
* Salt & pepper to taste
