Betty demonstrates how to make Sliced Tomatoes with Cucumber-Basil Dressing. This is a tasty way to use some of those fresh garden vegetables!

Sliced Tomatoes with Cucumber-Basil Dressing

4 medium-sized tomatoes, sliced in about ¼-inch slices
1 medium to large cucumber, peeled, halved lengthwise, seeded, and sliced in ¼-inch slices
6 ounces (3/4 cup) plain yogurt
6 ounces (3/4 cup) mayonnaise
1 tablespoon finely-chopped onion
½ tablespoon finely-chopped garlic
½ cup chopped fresh basil
¼ cup milk
1 ounce lemon juice
½ tablespoon sugar
¼ teaspoon coarse sea salt
¼ teaspoon freshly-ground black peppercorns
sprigs of basil, for garnish

Whisk together yogurt, mayonnaise, chopped onion, chopped garlic, chopped fresh basil, milk, lemon juice, sugar, sea salt and freshly ground black pepper. Add prepared cucumber slices and stir until cucumber slices are coated. Spoon sauce over sliced, fresh tomatoes on serving platter. Garnish with sprigs of basil. Serve immediately or cover with plastic wrap and refrigerate until serving time. This recipe makes about 4 cups of Cucumber-Basil Dressing, which will keep up to 2 days in the refrigerator.
