Lemon Pancakes | Pancakes with Lemon Zest
Ingredients:
1.5 cups all purpose flour
1.5 tbsp baking powder
1 tbsp granulated sugar
pinch of salt
1 egg
1.5 cups milk
1 tsp vanilla extract
1/3 cups melted butter
Zest of one lemon
Directions:
Mix dry ingredients in a large bowl. Mix wet ingredients in a separate bowl. Add the wet ingredients and lemon zest to the dry ingredients and mix.
Heat a cast iron griddle or pan or a non-stick pan. Put a tiny amount of oil on the pan/griddle (I use coconut oil). The pan should not be too hot, medium heat is best. You can also use a non-stick ceramic or teflon pan. Pour about 1/3 cup batter on the pan and flip once the upper side is getting bubbly and starts to dry a little bit. Cook the other side for about 30-45 seconds. Enjoy! :)
