Hey fam! Here’s the BEST CARROT CAKE recipe that’s so easy to make and too delicious not eat all of it instantly! The cake is very moist and covered with my homemade tofu frosting. AMAZING!
Here’s the recipe:
Cake
1 cup of shredded carrot
2 eggs
1/4 cup applesauce
2 teaspoons apple cider vinegar
1 1/2 tablespoons vanilla extract
1 1/2 cups oat flour
1/2 coconut sugar
1 1/2 teaspoon cinnamon
1/2 teaspoon baking soda
Pinch sea salt
1 tablespoon melted coconut oil
* Optional 1/3 cup my walnuts and raisins
Frosting
1 cup tofu
3 dates
1/4 vanilla extract
Yellow lemon drops
Sea salt
1/4 maple syrup
1/4 cup shredded coconut
