Quick and Easy Blueberry Muffin
Servings - 3 - 4
INGREDIENTS
Oil - 80 milliliters
Egg - 1
Milk - 120 milliliters
Vanilla extract - 1 1/2 teaspoons
All purpose flour - 200 grams
Granulated sugar - 150 grams
Baking powder - 2 teaspoons
Kosher salt - 1/2 teaspoon
Blueberries - 150 grams
PREPARATION
1. In a mixing bowl, add 80 milliliters oil, 1 egg, 120 milliliters milk, 1 1/2 teaspoons vanilla extract and whisk to combine.
2. In a another mixing bowl, add 200 grams all purpose flour, 150 grams granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon kosher salt, milk mixture and mix well. Add 150 grams blueberries and mix it again.
3. Divide the batter between muffin cups.
4. If you plan on making the larger muffins, we recommend adding 1 to 2 tablespoons of water to the empty cups. This way the cups with water will heat up at the same rate as the cups with muffin batter, helping the muffins cook evenly.
5. Preheat the oven to 350°F/180°C. Bake muffins 15 to 20 minutes or until tops are no longer wet.
6. Serve and enjoy.
