Arepas stuffed with avocado, vegan cheese, and pickled onion & radish! These guys are so insanely easy and can be enjoyed immediately or stored in the freezer. Here’s how:
To a bowl add 1 cup arepa flour, 1/2 tsp sea salt, and 1 cup warm water. Use your hands to combine ingredients - if the mixture is too dry, add more water by the tbsp. If the mixture is too wet, add more arepa flour by the tsp.
By arepa flour I mean “Masa Harina” which you can find in grocery stores by the company PAN (labeled precooked white cornmeal) or Bob’s Red Mill (labeled Masa Harina) You can also find online at Masienda, their ingredients are super clean. You’ll need the yellow bag labeled “Heirloom Yellow Corn Masa Harina”
From there, form your patties! This mixture makes around 6-8. Roll into a ball first then use your palms to form a disc. A little cracking is okay but if there are too many cracks you might need to add more water. The mixture doesn’t puff up at all while baking, the way you shape them is how they’ll come out, so don’t make them thin.
To bake them I use an arepa maker, but you can also make them in your oven or air fryer. Heat your oven/air fryer to 350 degrees, quickly spray and front and back of the arepas with oil, then bake for anywhere from 15-20 minutes. Keep an eye on them so they don’t burn. Be aware if you make them in an air fryer they’ll cook faster, so check them at 12 minutes to gauge where you’re at.
And that’s it! Let cool and store in the freezer, or enjoy immediately. Typically arepas are cut halfway and stuffed with ingredients - you can get creative and stuff them with whatever you want. Here I had breakfast arepas, but they would also be so good for dinner stuffed with taco ingredients 😍
