Recipe
1. Thinly slice spring roll wrappers (enough to coat 6 dumplings)
2. De-vein 250g prawns and mince
3. Use a food processor to turn 50g pork fat to a paste
4. Dice 50g of lotus root
5. Grate 15g ginger and 2 cloves of garlic
6. Slice a handful of scallions
7. Mix all ingredients together with an egg white and season with 1 tsp sesame oil, 1 tsp shaoxing wine, 1 tsp sugar, 1 tsp cornstarch, 1 tsp whitepepper, 1 tbs light soy.
8. Coach dimsums with spring roll wrappers and shape into a ball.
9. Fry at 350F until golden brown
