Today we’re going to talk about what oven rack position to use for different types of food.
Most ovens have between 5 and 7 rack positions. You’ll get the best results by positioning oven racks based on the type of food.
Use one of the top rack positions when broiling or toasting. The closer food gets to the broiling element, the faster it cooks.
Bake cookies, cakes, pies, muffins and biscuits on one of the center racks. When baking two cake layers on the same rack, leave 2-4 inches of space surrounding the pans. Pans shouldn’t touch each other or the inside of the oven. This spacing lets air circulate properly so your cake layers will bake evenly.
Use a lower center rack if you’re baking bread or a casserole, or roasting meat or poultry. Also use a lower rack position to brown the bottom of pizza crust or to roast vegetables. If you’re roasting a turkey, use a lower rack position that puts the top of the bird near the middle of the oven for even baking. Preheat the oven thoroughly to avoid burning the bottom of the turkey .
To make sure the bottom of your pies get good and brown, set the pie on a preheated cookie sheet on the bottom rack. After 20 minutes of baking, remove the cookie sheet and move the pie to the center rack for the rest of the bake time.
If you’re in a hurry to bake cookies and want to use two racks, here’s the secret. Leave the center rack empty. Position the racks in the slots directly above and below the center position to allow for air circulation. Also, offset the cookie sheet positions on the racks. Rotate the pans halfway through the suggested baking time for even baking. You might need to add a few minutes to baking time when using two racks.
If you’re baking four cake layers, use the same rack positions as when baking 2 pans of cookies. For the best air circulation, make sure none of the individual cake pans is directly above another pan. Put two cake pans toward the back of the upper rack; put the other two cake pans at the front of the lower rack.
Before I say goodbye, here are a few other tips.
1. Always arrange oven racks when the oven is cool.
2. Pre-heat the oven for X minutes after the beep says it’s preheated.
3. Reduce oven temperature by 25 degrees when using dark or nonstick pans.
4. Don’t peek too much! Opening the oven door throws off the recipe time. Look through the oven window instead.
