Dashi is an essential ingredient in Japanese cooking. From miso soup to tempura sauce, dashi is key.

Makes 4 cups of dashi
Ingredients:
4 cups water
3-4 slivers dried konbu ( kelp )
2 cup bonito flakes
Directions:
1.Wipe lightly konbu strips with paper towel.
2.Pour water into large pot. Add konbu strips to the pot.
3. Simmer over low heat for 15 minutes. Once konbu has blossomed open, take them out.
4. Bring liquid to boil and add bonito flakes.
5. Lower heat to medium and simmer for 2 minutes.
6. Strain with a colander.
7. Use immediately or store in refrigerator for up to three days.
