Vegan & Gluten-Free Peach Cobbler Recipe:
Ingredients:
4-5 peaches – peeled, cored and sliced (about 4 cups)
½ cup Organic Light Brown Sugar
Ground Cinnamon
For the Peach Cobbler Batter:
½ cup dairy-free butter, melted (I use Earth Balance)
1 cup Gluten Free 1:1 flour blend
¾ cup granulated sugar
1 teaspoon baking powder
¼ tsp salt
½ cup dairy free milk
1 tsp vanilla extract
1 Tbsp maple syrup
Ground cinnamon
Notes: It’s best to use peaches that are in season. But you can also use canned peaches and enjoy this cobbler all year round.
Instructions:
1.Preheat oven to 350 degrees.
2.Add the sliced peaches, sugar, cinnamon to a saucepan. Stir and cook on medium heat for a few minutes, until the sugar is dissolved, and the peaches get really juicy. Remove from heat and set aside.
3.In a large bowl, mix together the flour, sugar, baking powder, and salt. Add the maple syrup, vanilla extract, and dairy-free milk. Stir all the ingredients together until combined.
4.Pour the melted butter into a 9X13 glass baking dish and make sure it’s evenly spread out. Then pour the batter in the baking dish and smooth it into an even layer.
5.Pour the peaches and juices over the batter. Sprinkle cinnamon over the top.
6.Bake for 40-45 minutes. Remove from oven and let cool for 15-20 minutes. Serve with a scoop of dairy-free vanilla ice-cream or topped with vegan whipped cream.
