Raita is made with yogurt/curd with cooked or raw vegetables/fruits, seasoned with coriander,mint leaves; eaten as a side dish. There are many ways of making raitas. Raita has a cooling effect that makes balance with spicy curries.
Here, I am sharing lauki ka raita/bottle gourd with yogurt:
Ingredients are:
250 gm Lauki/Ghiya/Bottle gourd
400 gm curd (2 cup)
Garlic Chopped (5-6 cloves)
Curry leaves (7-8)
1 Green Chili Chopped
1 tbsp Black Mustard seeds or Rai seeds
1 tbsp carom seeds
1 tbsp Mustard oil
1 tsp Salt (as per taste)
1½ tsp Turmeric Powder
For garnishing (optional):
Coriander leaves
Instructions:
1. First, rinse and peel lauki/bottle guard. Then dice it into small
pieces.
2. Now, add 2 cup water in pressure cooker; boil lauki for 2-3
whistles in a pressure cooker.
Or you can boil lauki/bottle guard in an open pan for 10 minutes
till soft.
3. Meanwhile in a bowl take out fresh chilled curd.
4. Whisk curd by adding 2-3 tbsp water till smooth.
5. When lauki is boiled, take it out, let it cool down. Then strain
water by pressing boiled lauki/bottle guard in your palm and
squeeze them.
6. Repeat the process, if you think there is some water left.
7. Now, add boiled lauki/bottle guard in curd and mix it.
For tempering/tadka:
1. Heat 1 tbsp mustard oil in a pan. Add black mustard seeds or rai
seeds. Saute for 10 seconds.
2. After 10 seconds, add chopped garlic and green chili and saute
for 2 minutes till golden.
3. After 2 minutes, add 7-8 curry leaves and saute for 10 seconds.
And add it in the raita.
4. For tempting color of raita, just add 1 tsp mustard oil in same
pan; add 1½ tsp Turmeric Powder. Saute for 10 seconds and add
this to raita.
NOTE: oil should not be too hot; it will burn turmeric powder. Flame
should be on low flame.
5. Now, add green chili, 1 tbsp carom seeds, 1 tsp salt (as per taste); garnish with coriander leaves.
6. Yippee.!! Yummy & healthy lauki raita is ready....!!
Serve immediately or chill and serve later.
* serve with veg pulao, or any pulao,or with any sabji/vegetable or
with a combination of daal chawal,even with plain or stuffed
pranthas :)

Tips :
1.While sauteing mustard seeds, oil should be hot enough so that
mustard seeds turn black; otherwise it will taste bitter..
2. Use Rai seeds, if you do not have black mustard seeds in your
kitchen.
