When cutting the meat, make sure you cut against the grain DO NOT cut same direction, i love to use Skirt steak for my bistec, the meat is so juicy and tender and doesn’t dry out or become chewy. But of course you can use your favorite cut of steak
Ingredients: 8 servings
1/2 onion; thin sliced
2 jalapeño chopped
2 lbs flank steak; thin sliced(CUT AGAINST GRAIN)
1/2 lbs baby golden potatoes; thin sliced
2 minced garlic cloves
4 roma tomatoes; thin sliced
2 hatch/Anaheim peppers;roasted, peeled and chopped
7.75 oz hot tomato sauce
1/4 -1/2 c water
1/2 tsp ground cumin
1/2 tsp garlic salt
1/2 tsp black pepper
Salt to taste
Chopped cilantro
