If it told you what it was, you wouldn’t eat it. Salo, raw pork fat, is a traditional Slavic food that is especially beloved in Ukraine, Russia, and Belarus. While to a Western audience the idea of eating raw slabs of pork fat might be a bit… off putting, it’s actually an awesome snack, breakfast food, or vodka chaser. Typically served as a small, open faced sandwich, salo has seen a bit of a rejuvenation as modern home cooks and professional chefs are reevaluating and upgrading this humble classic.
