Ingredients:-
Sugar 1tsp
Salt 1tsp
Baking Soda 1tsp
Spinach Leaves 700g
Mint Leaves 50g
Coriander Leaves 50g
Oil as per Preparation
Cumin Seeds 1tsp
Garlic Chopped 1tbsp
Ginger Chopped ½tsp
Onions 3 Chopped
Tomatoes 2 Chopped
Green Chilli Chopped
Clarified Butter(Ghee) 1tbsp
Salt As Per Taste
Dry Red Chilli 3
Turmeric Powder ½tsp
Kashmiri Red Chilli 1tbsp
Cottage Cheese(Paneer) 200g
Nutmeg
Processed Cheese 1Cube
Fresh Cream 50ml
Process and Preparation :-
Boil water and add sugar,salt and baking soda, stir it well, and in the boiling water add all the green leaf veggies, Spinach,Mint and Coriander, boil them all for 1 min in the bubbling hot water and immediately remove and add it to cold water, if ice water available then too good, otherwise it's okay to be in normal room temperature water,
Then in a Pan add Oil 2-3tbsp, once oil gets hot add Cumin Seeds and let it crackle for ½min then add garlic and ginger chopped, saute it properly, don't burn it, then add the finely chopped onions, once the onions come to transculent and done then add finely chopped tomato and also the green chillies chopped, don't forget to add salt after adding tomatoes, then mix it all and cook to a proper saute roast, then all these sauted veggies and the boiled leaf veggies, grind them all in a mixer to make a puree or a paste, you'll notice that your puree will come glowing green colour, okay all good
Next Step :) in the same pan add ghee then a sprinkle of cumin seed and add turmeric powder, Dry red chilli and Kashmiri red chilli Powder mix them all and then only add the puree or the paste and cook them all for 5-6 min in open, then add paneer and a pinch of grated nutmeg for a beautiful aroma then add the cheese cube, obviously grated, then salt as per needed, cover it and cook for 15 min in low medium flame, that's it, if you have and want to add the fresh cream then add, it will give a rich flavour and creamy texture, otherwise it's okay to have the nutrisious and protien full Dish of Palak Paneer, and also while servind add a slice of butter and sprinkle some roasted chopped garlic it tastes awesome
