Ingredients
4 eggs
2 teaspoons oil
1 medium onion, finely chopped
1-2 green chillies, finely chopped
1 medium tomato, finely chopped
1 tablespoon + 1 teaspoon chopped fresh coriander leaves
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
½ teaspoon cumin powder
Salt to taste
1 tablespoon butter
4 bread toasts
Method
1. Heat oil in a non-stick pan. Add onion and green chillies and sauté till onion turns golden.
2. Add tomato and sauté for 1 minute. Add 1 tablespoon coriander leaves and sauté for 30 seconds.
3. Add turmeric powder, chilli powder and cumin powder, mix well and sauté for 1 minute.
4. Beat eggs in a bowl, add to pan along with salt and mix lightly for 1 minute. Add butter and remaining coriander leaves and mix well.
5. Cut bread toasts into triangles.
6. Garnish with a coriander sprig and serve hot with toast triangles.
