In this video we learn how to use a knife jig to sharpen our Shun Santoku knife. We bought this jig from Wasabi knives online and are really happy with the product. As someone who does not feel 100% comfortable with free hand sharpening on a whetstone, this was much easier to tackle! With this jig you are able to set the proper angle of the blade to each knife and also ensure a smooth run of the stone on each side of the knife. There was a noticeable difference in the sharpness of the blade after the first run, and we decided to do a second to get the knife VERY sharp. Be sure to maintain your knife with a proper steel after sharpening to help keep the edge on the blade longer. Product link BELOW!
