A quick recipe
Homemade Ulavacharu
Soak 3/4 cup kollu / horse gram in water for 8-10 hours.
Now add the soaked horse gram to a pressure cooker along with 2 cup water and pressure cook 10 whistle
Now separate the cooked horse gram and water ( save for later)
To a pan add 2 Tbsp oil, 1 tsp mustard, 1 tsp cumin, 1 tsp fenugreek, thin slices of 1 onion, 3 garlic, 1 green chilli, 1 red chilli, curry leaves and sauté for 2 min.
Now add 1/2 tsp asafoetida, 1/4 tbsp chilli powder, 1 tsp turmeric powder.
Grind the cooked horse gram and add to pan, add kollu water, 1/4 cup tamarind water( soak small amla size tamarind in water & extract the pulp), salt & jaggery 1 tsp.
Cook for 15 min and once it gets thick turn off the flame and filter it.
Chicken marination
Chicken 1/2 kg
Chilli powder 2 tbsp
Cumin powder 1 tbsp
Coriander powder 1 tbsp
Ginger garlic 3 tbsp
Green chilli 2
Fried onion 1/4 cup
Curd 1/2 cup
Coriander leaves
Mint leaves
Salt
Lemon juice 3 tbsp
Marinate and rest for 1 hour
Now add ghee 2 tbsp, oil 5 tbsp and the chicken pieces & cook for 10 min.
Soak 2 cup basmati rice in water for 30 min.
To a pan add 6 cup water and boil it.
Add

Cardamom 4
Cloves 5
Star anise 1
Mace 1
Stone flower 1 tsp
Cinnamon 1 inch stick
Cumin 1 tsp
Green chilli 1
Coriander leaves
Mint leaves
Salt
Soaked rice and cook for 70%
Now layer chicken, rice, Ulavacharu, fried onion, coriander & mint leaves, Garam masala, ghee
Cover it with banana leaves & Dum for 30 min
