👉 Ingredients:

Octopus 700 g
Tomato sauce 500 ml
Olives 80 g
Oregano 6 g
Lemon 1 pc
White beans 300 g
White wine 80 ml
Parsley 10 g
Red onion 120 g
Salt, black pepper To taste
Olive oil 60 ml
Bell pepper 120 g
Baking powder 1 g
Paprika 5 g
➡️ Method of Cooking:
✅ For the Lima Beans
Soak the Lima beans in water the night before cooking them. When you ready to cook them, change the water, and bring them to a boil. Reduce the heat to a simmering stage and cook for 1 hour. Then take the beans from the heat, add the baking powder, and put them back on the heat and continue cooking for another half an hour.
When you have the scam, make sure to discard it. Check the beans if they are cooked by taking one bean and pressing it or you can just taste. It works as well.
When cooked, let them chill in the cooking liquid for about 20 minutes and then strain. Let the beans chill to room temperature and marinate them with salt, black pepper, olive oil, and lemon zest. You can serve them at room temperature or warm.
✅ Cleaning the Octopus & Preparing the Vegetables
Wash the octopus in cold water to get rid of the dirt and sand. Then transfer to a cutting board and cut off the eyes and take out the mouth of the octopus. In this version of cooking, we are not blanching the octopus so we can cut it already into smaller pieces/ portions.
I like to cook the head of the octopus too as it has also flavour to give but it comes more chevy than the arms of the octopus, but you can chop it later and still serve it or use it as a filling for pasta or other dishes.
Cut the red onion into medium size cubes. Clean the bell peppers and cut strips.
Crush and chop the garlic. Finally, chop the parsley.
✅ Cooking the Octopus
Heat a pot on the stove (6-7/9 electric stove power), add oil and the onion with the garlic. Roast until they are starting to get a nice colour and then add the peppers. Keep roasting for about 2-3 minutes and then add the paprika. After the paprika, add the white wine. Let the wine evaporate before adding the crushed tomatoes.
After adding the crushed tomatoes, season with salt, black pepper, mountain oregano and add the octopus. Close with a lid but not completely to allow the liquids to evaporate slowly and braise the octopus. Reduce the heat and braise for about 35-50 minutes, depending on the size of the octopus.
In the last five minutes, add the black olives and some olive oil to refresh the dish.
✅ Serving
When serving, add to the octopus the chopped parsley. Place the beans on the bottom of the plate and then he braised octopus, vegetables, and the amazing juices.
