Grilled Corn & Chipotle Guacamole
3 ripe avocados
½ cup grilled corn kernels
1 lime, juiced
¼ red onion, finely diced
½ jalapeno pepper, minced
1 tomato, seeded and diced
1 clove of garlic, minced
1 bunch of fresh cilantro, chopped
½ tsp chili powder
½ tsp cumin
cayenne pepper to taste
salt and pepper to taste
To grill the corn
Soak cob (with husk still on) in water for 15 minutes.
Remove cobs from water.
Place cobs on the grill for about 10 minutes, turning frequently until you've got grill marks on all sides.
Carefully cut the corn off the cob.
Using a potato masher, mash the avocados.
Mix in lime juice, corn, red onion, jalapeno, tomato, garlic, chipotle pepper, cilantro, cumin, chili powder, salt and pepper.
Serve immediately or store in the refrigerator for up to three days.

Tropical Fruit Guacamole

3 ripe avocados
1 lime, juiced
½ jalapeno, seeded and minced
½ cup pineapple, finely diced
½ cup mango, finely diced
½ red onion, finely diced
1 tsp shredded coconut
3-4 mint leaves, finely chopped
Using a potato masher, mash the avocados.
Mix in lime juice, pineapple, mango, red onion, jalapeno and mint leaves.
Serve immediately or store in the refrigerator for up to three days.
Enjoy!
Thai Guacamole
3 ripe avocados
1 lime, juiced
3-4 green onions, chopped
1 red chili, seeded and minced
1 tsp ginger, freshly grated
1 clove of garlic, minced
1 tbs sweet thai chili sauce [Homemade]
Using a potato masher, mash the avocados.
Mix in lime juice, green onion, red chili, ginger, garlic and thai chili sauce.
Serve immediately or store in the refrigerator for up to three days.
Enjoy!
Sweet Thai Chili Sauce
3 cloves of garlic, minced
2 red chili peppers, minced (for more heat leave the seeds in, for less remove them)
1 tsp ginger, grated
½ cup sugar
¼ cup rice vinegar (or white vinegar)
½ cup water
1 tbsp cornstarch
3 tbsp water
salt to taste
In a small saucepan, combine garlic, chili pepper, ginger, sugar, rice vinegar and water.
Bring mixture to a boil, reduce heat and simmer for five minutes.
In a small bowl, mix cornstarch and water to create a slurry.
Pour cornstarch mixture into the sauce whisking constantly until it thickens.
Allow mixture to cool and store it in a mason jar in the refrigerator.
