Ingredients:
- 4-5 papads (choose your favorite type)
- 1 cup boiled and mashed potatoes
- 1/2 cup finely chopped onions
- 1/4 cup grated carrots
- 1/4 cup finely chopped capsicum
- 1/4 cup finely chopped coriander
- 1/2 teaspoon chilli flakes
- 1/4 teaspoon salt ( adjust to taste )
- 1/2 teaspoon garam masala
- 1/4 teaspoon cumin power
- 1/4 teaspoon black pepper powder
- 1/2 teaspoon of red chilli powder
- 1/2 teaspoon of lime juice
- Oil for deep frying
Instructions:
1. In a mixing bowl, combine the above mentioned ingredients. Mix well to form a uniform mixture.
2. Take one papad at a time and soak it in water and then wipe it with tissue paper.
3. Place a spoonful of the potato mixture on one end of the papad.
4. Carefully roll the papad, enclosing the filling, and sealing the edge with a bit of water to make a tight roll. Repeat this process for all the papads.
5. Heat oil in a deep frying pan over medium heat. Once the oil is hot, gently slide in the papad rolls, a few at a time.
6. Fry the rolls until they turn golden brown and crisp. Remove them using a slotted spoon and drain on a paper towel to remove excess oil.
7. Serve the papad rolls hot with your favorite chutney or dip.
