Roasting shrooms is a great way to bring out their deep caramelized flavor.
Set your oven to 400 degrees.
We're working with some king trumpet mushrooms here. Add some olive oil to them. Give them a gentle toss, season them with salt, and then pop them in the oven.
Midway through the cooking you're going to want to flip them over, so they get caramelized evenly on both sides. Pull them out of the oven when they're nice and caramelized. Take some wine, something good (but not too good), and deglaze the pan. Means that you're going to get all the great sticky brown stuff off the bottom which is wonderful for sauces.
Add those juices to a sauce pot, add some butter, chop up a little thyme, swirl the pan to melt the butter and incorporate the thyme.
Here I am plating the final dish: some roasted king trumpet mushrooms with a wine, butter, thyme sauce. And look a those pretty flowers!
