I remember my mom's cooking from time to time. Now I miss her carioca. We sell carioca in our store before and this is her recipe. She usually uses caramel syrup to sweeten her carioca. But my favorite is the crunchy one. I try to re-make her carioca, the curnchy... and the chewy one. You can try both and tell me which is better.
Here's the recipe:
1 kg cassava
2 Tbsp sugar
Crunchy carioca (25pcs):
1/3 cup sugar
oil
Chewy carioca (25pcs) caramel syrup:
2/3 to 3/4 cup sugar (preferably brown sugar)
1/3 cup water
Yield: 25pcs
