Michelin-starred chef Giorgio Locatelli has worked with Filippo Berio Olive Oil to create some beautiful seasonal recipes to inspire and to try out some new flavours. First up is an unusual and moreish dish, Sweet and Salty Cavolo Nero Pesto with Courgette Spaghetti. The pesto is created by blanching then cooling down the Cavolo Nero, also known as black cabbage and combining with salt and pine nuts in a pestle and mortar. Finish it off with a drizzle of Filippo Berio’s Extra Virgin Olive Oil.
