Ingredients:
150g (about 1 cup) Dark chocolate (50-70% cocoa solids - see notes)
1/3 cup (80g) Hot water
1 Tbsp (6g) Instant coffee
1/2 cup (100g) Granulated sugar (see notes)
Notes: Don’t skip the instant coffee or change the amount of sugar. Otherwise, the coffee mixture won’t whip properly.
I don’t recommend using milk chocolate because the mousse will be too sweet since the coffee mixture calls for 1/2 cup of sugar. Chocolate is the main ingredient in this mousse, so make sure to use good-quality chocolate.
