Belizean Fry Jack is basically dough that's deep fried. It's usually made with flour, baking powder and water. Some people put some type of fat in it like butter, lard or shortening, but I don't put any fat in mine. I also switch out the water for milk, which makes the bread softer and fluffier. I think the addition of the milk, which had fat and sugar built into it changes the fried better to make it taste even better.
1 c. all-purpose flour
1 1/2 tsp. baking powder
3-4 oz milk.
3 cups oil for frying
As a child growing up in Belize, we use to eat Fry Jack with refried beans or stew chicken or eggs. My uncle's American wife sprinkled powdered sugar on the top to make a sort of doughnut. I found that strange at first, but did learned to appreciate it. My husband's family called Fry Jack, Fry Cakes.
