Recipe -
Ingredients:
2 large onions (thinly sliced)
1 cup chickpea flour (besan) or all-purpose flour
1/2 cup rice flour (for extra crispiness)
1-2 teaspoons cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon chili powder (adjust to taste)
1 teaspoon garam masala (optional)
1-2 tablespoons chopped fresh cilantro (optional)
Salt to taste
Water (as needed)
Oil for frying
Instructions:
Prepare the Onions:
Peel and thinly slice the onions. Place them in a large mixing bowl.
Sprinkle a pinch of salt over the onions and mix well. Let them sit for 10-15 minutes to release moisture. You can squeeze out the excess moisture after that, as it helps the batter stick better.
Make the Fritter Batter:
To the bowl with onions, add chickpea flour, rice flour, cumin seeds, turmeric powder, chili powder, garam masala, and chopped cilantro (if using).
Mix everything thoroughly so that the onions are evenly coated with the dry ingredients.
Gradually add a small amount of water, just enough to form a thick batter that coats the onions. The batter should not be runny; it should stick to the onions.
Heat the Oil:
Heat oil in a deep frying pan or wok over medium heat. You need enough oil to submerge the fritters partially.
To check if the oil is ready, drop a small piece of batter into the oil. If it sizzles and rises to the surface, the oil is hot enough.
Fry the Onion Fritters:
Using your hands or a spoon, drop spoonfuls of the batter into the hot oil. Be careful not to overcrowd the pan. Fry the fritters in batches if necessary.
Fry until golden brown and crispy, about 3-4 minutes on each side.
Once cooked, remove the fritters and place them on a plate lined with paper towels to absorb excess oil.
Serve:
Serve the crispy onion fritters hot with chutney, yogurt, or your favorite dipping sauce. Enjoy as a snack or appetize.
