It may not be the "Pineapple Express" you are thinking about, but this tropical rum/cinnamon libation can also mellow you out on what's left of those hot summer days. Plus it has pineapple juice in it. What goes better with rum than pineapple juice? Cheers!

RUM & PINEAPPLE EXPRESS

IN A SHAKER TIN GENTLY MUDDLE:
2-3 MINT LEAVES
3/4oz (22.5ml) - CINNAMON SYRUP
ADD
2oz (60ml) - AGED RUM
2oz (60ml) - PINEAPPLE JUICE (FRESH IS BEST)
3/4oz (22.5ml) - FRESH PRESSED LIME JUICE
ADD 2 OR 3 ICE CUBES AND SHAKE FOR 5 SECONDS.
STRAIN INTO A GLASS FULL OF CRUSHED ICE.
TOP WITH A COUPLE OF DASHES OF ANGOSTURA BITTERS.
GARNISH WITH A PINEAPPLE WEDGE, SPRIG OF MINT, AND A COCKTAIL UMBRELLA.
CINNAMON SYRUP
--------------------
IN A SMALL SAUCE PAN COMBINE:
2/3 CUP (150ml) WATER
2/3 CUP (150 ml) GRANULATED SUGAR
5 CINNAMON STICKS,
4 INCHES EACH (10cm), BROKEN INTO SMALLER PIECES
-BRING TO A BOIL OVER MEDIUM-HIGH HEAT, STIRRING TO DISSOLVE THE SUGAR.
-REMOVE FROM HEAT AND LET STAND FOR 1 HOUR.
-STRAIN SYRUP INTO A GLASS JAR AND REFRIGERATE FOR UP TO 1 MONTH.
-MAKES ABOUT 1 CUP (250ml)
