Linguine Al Pesto is a wonderful pasta dish from Genoa and is usually cooked with linguine pasta, potatoes and green beans. This classic dish `Linguine al Pesto Genovese` is from the region of Liguria. Using beautiful fresh ingredients of pesto and vegetables makes this dish a crowd pleaser that is full of nutrition and flavour. You can also find our pesto video on this channel. INGREDIENTS;
350 x grams diced potatoes
250 x grams of pasta
3 - 5 x tablespoons pesto
150 x grams fresh green beans
10 x medium sized basil leaves
1 x tablespoon olive oil
salt to taste
three cloves whole garlic
METHOD:
-add pasta and chopped vegetables to salted boiling water as per video
-cook for approximately 8 minutes
-start preparing pesto base
-heat oil in pan and add garlic to infuse the oil
-once garlic is golden add basil leaves
-add three tablespoons of pesto
-cook for approximately one minute then turn heat off
-strain pasta and add cooked pasta and vegetables to pan to combined all the ingredients and return everything back into the large pot that the pasta was cooking in
-mix ingredients and combine till even, adding more pesto if you like and place on heat for about 20 seconds till all combined
-top with grated parmesan and drizzle with olive oil
