Congee hot pot is from Shunde in Guangdong province in China. Its Chinese name is “Wu mi zhou,” which means “congee with no rice.” That’s because traditionally, this hot pot base is made from congee that was cooked for over 10 hours. You cannot see the rice anymore, but you can taste it. I love this hot pot so much because the starch and sweetness from rice perfectly preserve the meat’s natural flavors and keep the meat tender and chewy during cooking.
