ALOO MURI
Ingredients
3 medium potatoes (aloo), boiled and peeled
4 cups puffed rice (muri)
2 tbsps coriander seeds
1 tbsp cumin seeds
1 medium onion, chopped
2 green chillies, chopped
1 tsp red chilli powder
Black salt to taste
Salt to taste
¼ cup tamarind water
2-3 tbsps mustard oil
2-3 tbsps chopped fresh coriander leaves + to sprinkle
¼ cup aloo bhujiya + to sprinkle
½ lemon
Method
1. Heat a nonstick pan. Add coriander seeds, cumin seeds and sauté for 2-3 minutes.
2. Transfer in a mortar and crush to fine powder with a mortar.
3. Take a bowl, cut the potatoes into medium sized pieces and add to the bowl.
4. Add onion, green chillies, puffed rice, 2-3 tbsps ground spice mix, tamarind water, mustard oil and mix well.
5. Add coriander and aloo bhujiya and mix well. Squeeze lemon and mix.
6. Transfer in serving bowls, sprinkle coriander, aloo bhujiya and serve immediately.
