Aji is another word for chili peppers (used in some South American countries) and also refers to a condiment or compound sauce which is what Aji Verde is. Enjoy it with a variety of roasted vegetables, poultry, grilled meats such as steaks, pork or lamb chops
Ingredients:
4 tbsp. Mayonnaise
2 green onions sprigs, finely chopped
1 tbsp. Apple cider vinegar
2 roasted & seeded Jalapeno peppers (Poblanos or Serranos work too)
1 garlic clove finely chopped
Juice of 1 lime
1/2 cup cilantro leaves
Salt & pepper to taste
