Healthy asparagus chanadal curry with a south indian twist
Ingredients:
Asparagus - 1 bunch
Oil - 1.5 Tbsp
Mustard seeds (Avalu) - 1/3 rd tsp
Cumin seeds (Jeera) - 1/3 rd tsp
Dry red chilli (Endumirchi) - 1
Chanadal (Senagapappu)- 1 tsp
Urad dal (Minapappu)- 1 tsp
Hing/ Asofoetida - 1/8th tsp
Green Chillies - 3 to 4
(Pachimirchi)
Ginger Grated - 1 tsp
(Allam)
Curry Leaves Chopped - 10 to 12
(Karvepaku)
Turmeric - 1/3rd tsp
(Pasupu)
Chanadal/ Senagapappu - 1/3 Cup
(Soaked in water for 1 hr)
Fresh Coconut Finely Grated - 1/2 Cup
Salt to taste
ntro Chopped - 2 to 3 Tbsp
(Coriander Leaves/ Kothimeera)
