Full written recipe for Salt & Pepper Crispy Corn
Prep time: 15-20 minutes
Cooking time: 10-15 minutes
Serves: 3-4 people
Ingredients:
Coating & frying
SWEET CORN | स्वीट कॉर्न 2 CUPS
SALT | नमक TO TASTE
BLACK PEPPER POWDER | काली मिर्च पाउडर A LARGE PINCH
GINGER GARLIC PASTE | अदरक लहसुन की पेस्ट 1 TSP
REFINED FLOUR | मैदा 2 TBSP
CORN FLOUR | कॉर्न फ्लोर 6-8 TBSP
WATER | पानी A SPLASH
Tossing
OIL | तेल 1 TBSP
ONION | प्याज़ 1 TBSP (CHOPPED)
GINGER | अदरक 1 TSP (CHOPPED)
GARLIC | लहसुन 1 TBSP (CHOPPED)
YELLOW BELL PEPPER | पीली शिमला मिर्च 1 TBSP (CHOPPED)
CAPSICUM | शिमला मिर्च 1 TBSP (CHOPPED)
RED BELL PEPPER | लाल शिमला मिर्च 1 TBSP (CHOPPED)
GREEN CHILLI | हरी मिर्च 2-3 NOS. (SLIT)
VINEGAR | सिरका ¼ TSP
SALT | नमक TO TASTE
BLACK PEPPER | काली मिर्च A LARGE PINCH (FRESHLY CRUSHED)
SUGAR | शक्कर A PINCH
SPRING ONION GREENS | हरे प्याज़ के पत्ते A HANDFUL (CHOPPED)
Method:
Add the sweet corn kernels in boiling water & boil for 3-4 minutes, then transfer the boiled corn to a big size mixing bowl & allow it to cool down for couple of minutes, make sure you spread them evenly so that the excess steam escapes.
Further add salt, ginger garlic paste, black pepper powder & mix well.
Then add the entire amount of maida & 3 TBSP of cornflour, mix with light hands so the corn coats well.
Then add a splash of water & recoat the corns with only cornflour, add 1-2 TBSP of corn flour at a time & repeat the process of coating flour 3-4 times so it gets coated evenly.
Let the corn kernels rest for a while after coating.
Set oil in a wok for deep frying, before frying sift the coated corn using a sieve or a spider to remove excess flour, carefully add the coated corns in batches in moderately hot (165° C) oil on medium heat, cover the vessel with a lid for the first minute just as a precaution if any kernel pops, then remove the lid & fry over medium flame until crisp
Once fried remove in a strainer so to get rid of excess oil. Keep this crispy corn aside until you toss further ingredients.
Set a wok over high heat, add oil & let it get hot.
Further add onion, ginger, garlic, all three bellpeppers & green chilli, stir well & saute over high flame for a minute.
Then add the crispy corn & the remaining ingredients, toss well over high flame for a minute again.
Your delicious salt & pepper crispy corn is ready.
