When the pressure of COVID restrictions in Los Angeles pushed chef Phillip Frankland Lee (chef-owner of Scratch restaurants, which comprises Sushi by Scratch, Pasta Bar, and Scratch Bar & Kitchen) to set up shop in Austin, Texas, it didn’t take long for the gamble to pay off. Sushi by Scratch was a hit already doing well when a social media push from an early Austin guest — Joe Rogan, who, as out listsners know, took all our Spotify money — that sent things into another stratosphere for Phillip’s company.
