This month, Miss Joanne makes Irish Potato Bread.
Ingredients:
1 ½ lbs potatoes
1 ½ cup flour
2 tablespoons melted butter (plus more for frying)
Directions:
1. Peel and cut the potatoes into pieces. Boil until cooked.
2. Mash the potatoes and stir in the flour and melted butter.
3. If you want to add anything in (cheese, onions, fresh herbs, etc.) do it now.
4. Mix until it forms a dough. Remove from bowl and kneed, adding more flour as necessary.
5. Separate dough into baseball sized balls. Roll the dough into a thin circle and cut it into quarters.
6. In a frying pan, heat oil and butter. Place the pieces of dough into the pan and cook until golden brown on both sides.
