Rujak, a fruit salad dish of Javanese origin, translating to ‘salad’. It is basically a spicy palm sugar dressing with a variety of fruits and vegetables. On the streets, it is common made as you order.
INGREDIENTS:
~ SAUCE ~
2 chilli
½ tsps. Salt
2 tbsp peanut butter
150g palm sugar
2 table tamarind pulp
½ tsp roasted shrimp paste
water
~ FRUIT ~
Apple
Mango
Cucumber
Sweet potato
Pineapple
METHOD:
~ SAUCE ~
1. In a mortar, crush after every ingredient is added, the chilli, peanut butter, palm sugar, shrimp paste, tamarind pulp, salt
2. Add water if the consistence does not suffice
~ TO SERVE ~
1. Cut fruit
2. Serve sauce in separate bowl
