Biryani Kathirikai Recipe:
Masala:
Peanuts (with skin) - 3 tbsp
Cashew Nuts (whole) - 6 nos
Poppy Seeds - 1 tsp
White Sesame Seeds - 1 tsp
Coriander seeds - 2 tsp
Black Peppercorn - ½ tsp
Preparation:
Groundnut Oil - ¼ Cup
Mustard Seeds - ½ tsp
Fenugreek Seeds - ¼ tsp
Curry Leaves - 2 sprigs
Ginger Garlic Paste - 2 tsp
Onion (finely chopped) - 2 nos
Tomato (puree) - 2 nos
Brinjal (slit) - 5-6 nos
Turmeric Powder - ¼ tsp
Cumin Powder - ½ tsp
Red Chilli Powder - 1 tsp
Salt - 1 ½ tsp
Tamarind pulp - Lemon sized portion
Coriander leaves - 2 tbsp
Cooking Instructions:
1. Dry roast the ingredients for the masala and rind to a fine powder.
2. Heat oil, add the brinjal and saute for a few mins and set aside.
3. For the preparation, heat oil in a pot and add the fenugreek and mustard seeds.
4. Add the curry leaves.
5. Add the onions and ginger garlic paste and saute until light brown.
6. Add the tomato paste and powdered spices and cook until the oil separates.
7. Add the masala and water and bring to a boil. Add the salt. Add the tamarind pulp.
8. Add the brinjal, cover and simmer for 10 mins.
9. Finish with coriander leaves.
