Lapsi is one of the most well-known of Gujarati desserts, this sweet dish is made by roasting broken wheat, then sweetening it with sugar, adding nuts and Rasins and finally flavoring it with cardamon powder.
Roasting the broken wheat in ghee gives the Lapsi a rich brown colour, intense aroma and a nice nutty flavour.
Ingredients
1 and 1/2 tablespoons ghee
1 large cinnamon stick
3 cloves
1 cup bulgur wheat or broken wheat
1 cup sugar
2 table spoons broken cashew nuts
2 table spoons sliced Almonds
2 table spoons golden Rasins
2 and 1/2 cups water
1/4 cup milk
1/2 tea spoon cardamon powder
Method
Place a pressure cooker on medium heat and add 1 and 1/2 table spoon ghee
Add 1 large cinnamon stick, 3 cloves and give it a stir
Add 1 cup bulgur wheat of broken wheat and stir for 5 minutes
This will change the color to dark brown and roast the broken wheat giving it a lovely nutty aroma
Add 2 table spoons broken cashew nuts, 2 table spoons sliced Almonds,
2 table spoons golden Rasins and stir everything for 2 to 3 minutes
Add 2 and 1/2 cups water and 1/4 cup milk and bring to a boil
Add 1 cup sugar and stir until the sugar devolves
Bring everything to a boil, turn the heat to medium low and pressure cook for 2 whistles
After 2 whistles turn the heat off and let the pressure cooker sit until it has cooled
Open the cooker and gently stir the Lapsee from outside in, fluffing it
Add 1/2 tea spoon cardamon powder and gently stir everything again
Remove from heat and garnish with 1 table spoon broken cashew nuts
