🗒️ INGREDIENTS
8 eggs
½ cup heavy cream
¼ tsp salt
¼ tsp ground pepper
5 cups baby spinach
3 tbsp olive oil
½ cup purple onion thinly sliced
1 cup mushrooms sliced
1 cup ham cubed
1 cup mozzarella cheese shredded
½ cup parmesan cheese shredded
Garnish:
¼ cup fresh cilantro shopped
📝 INSTRUCTIONS
1️⃣ Set an oven rack to the middle position and preheat the oven to 325°F.
2️⃣ In a medium bowl, whisk together eggs, heavy cream, salt, and pepper.
3️⃣ In a nonstick skillet, heat 1 tbsp of olive oil. Add mushrooms and cook for 2-3 minutes, stirring occasionally.
4️⃣ Sauté onions until softened. Add spinach and cook until wilted.
5️⃣ Grease the bottom and sides of a cast iron skillet with olive oil using a pastry brush. Transfer cooked onions, spinach, and mushrooms to the skillet.
6️⃣ Spread cubed ham evenly over the other ingredients.
7️⃣ Pour the egg mixture over the vegetables. Top with mozzarella and parmesan cheese.
8️⃣ Bake for 20-25 minutes, or until the middle of the frittata is fully cooked.
9️⃣ Let it cool for 5 minutes. Garnish with fresh cilantro and serve.
