“Kuih Keria” Malaysian Sweet Potato Doughnuts
Kuih keria (also Known as kuih gelang) is Malaysians favourite sugary donuts that commonly available in Malaysia street vendor. We love to serve these for breakfast and during afternoon tea. These sweet potato donuts is made with 5 ingredients with the main ingredients are mashed sweet potato that mix with flour. Then deep fry and generously coated the in white sugar. The texture of this donut is crunchy on the outside and soft in the inside. Bet you will not stop at one donut :)

(Make 18-20 small donuts)
Ingredients:
500g sweet potato, peel & cut into cubed
1 cup and 3 tbsp flour
1 tbsp rice flour
1/2 tsp salt
Sugar syrup :
1/4 cup sugar
2 tbsp water
oil for frying
Method:
1.) Bring a pot of water to boil and add 1/2 tsp of salt. Cook the sweet potato until soft, about 10-15 mins.
2.). Drain and mash the sweet potato till soft then mix in the flour and rice flour in 2 batches. knead till it form into a soft dough.
3.) Grease oil on your palm and divide the dough into 18 even balls, slightly flatten the dough and make a hole in the center to create a donut shape.
4.) Heat oil over medium heat, deep fry them until golden brown. Remove from the heat and set aside.
5.) In a wok add in sugar and water. Stir constantly with low heat until the sugar syrup bubbles and thickens slightly.
6.) Quickly turn into low heat and add in the fried sweet potato into the thickened syrup.
7.) Keep stirring until all the donuts are well coated with the syrup. Continue to cook till the sugar syrup change into crystals like.
8.) Remove from the heat and serve the donuts warm.
