Watch a rare glimpse into how Beaufort Chalet d’Alpage is made (captured by our International Cheese Buyer, David, on a recent trip to Savoie, France)! You can see that the curds are drained by hand and the cheesemaker knows exactly how much to scoop up to make one ~90lb wheel. The pulley helps the cheese maker move the curd into the wooden molds where they are then pressed and turned every few hours for the first day.
