Chicken Alfredo Lasagna Roll Ups
7 lasagna noodles
3 chicken breasts
2 tbs olive oil
4 tbs butter, divide
10 oz. Frozen spinach
1 tbs garlic paste &/or minced garlic
7 oz ricotta cheese
2 oz. cream cheese
Boursin cheese, garlic & fine herbs flavor
Pint heavy cream
Parmesan cheese
Mozzarella cheese
Seasonings: paprika, S&P, Kinder’s buttery poultry, garlic powder, onion powder
-Cut up chicken & add olive oil & seasonings. Melt 2 tbs butter to pan & add chicken.
-Cook lasagna according to package instructions. Drain & rinse with cool water.
-Cook frozen spinach in microwave, strain to remove water, & add to a bowl with ricotta, cream cheese, salt, & Cajun seasoning.
-Remove chicken from pan. Add remaining butter, if needed, & heavy cream. Bring to slight boil. Add garlic paste, Boursin cheese & 1/2 cup Parmesan cheese. Season with salt, paprika, & Cajun.
-Assemble lasagna with spinach mixture, chicken, Parmesan cheese, & Alfredo sauce. Roll tightly. Add Alfredo sauce to bottom of baking pan. Arrange lasagna rolls side by side. Add remaining Alfredo sauce & top with mozzarella & Parmesan cheese.
-Sprinkle smoked paprika & Italian seasoning on top, optional. Bake at 350 for 15-20 minutes. Enjoy!
