Harira; a traditional Moroccan soup that is the epitome of comfort and warmth 🥰🤍*always serve with harcha (semolina bread)* ‼️
INGREDIENTS
{Tomato slurry}
1 (14oz) can diced tomatoes
1/2 large white onion, diced
{Soup}
2 tbsp ghee/butter
“tomato slurry”
1 (14oz) can of chickpeas (with the juice aka aquafaba)
2 tbsp cilantro, chopped
2 tbsp parsley, chopped
2 cups of water
1/2 tbsp sea salt
1 tsp pepper
1/2 tsp cinnamon
1 tsp ground ginger
1/4 tsp turmeric
1/2 tsp saffron
1 cup dry red lentils
2 tbsp tomato paste mixed with 2 1/2 cups of water
flour slurry (1/2 cup of flour mixed with 1 cup water)
DIRECTIONS
In a food processor, blend the can of diced tomatoes and white onion until a slurry consistency comes to fruition; set aside
Heat the ghee/butter over medium heat. Add your spices and toast them for about 30 seconds.
Stir in the tomato slurry, chickpeas, dry lentils cilantro, parsley, and 2 cups of water; let simmer, covered, for 20 mins or until the lentils are cooked through. Stir every 5 minutes.
Stir in the tomato paste mixture and saffron; let simmer for 5 minutes.
Stir in flour slurry to thicken (if soup becomes too thick, you can thin it out with water, 1/4 cup at a time)
Serve with spicy harissa, fresh lemon, and cracked pepper

What do you like more, vegan burgers that try to imitate the taste of meat or veggie burgers? 🤔 I'm clearly on the non-meaty side, but to be fair I never had a "real" burger made from meat in my life... But I think everyone would love this delicious burger, no matter if vegan or not! 🤌🏼

RECIPE (5 patties)
- 250g cooked beets
- 1 can (240 g) chickpeas
- 1 cup (85 g) walnuts
- 1/2 cup (40 g) rolled oats
- 1 medium onion, sautéed
- 1-2 garlic cloves, sautéed
- handful fresh parsley
- handful fresh thyme
- 1 tsp cumin
- 1/2 tsp chili powder
- 1 tbsp soy sauce
- 1/2 lemon, juiced
- salt and pepper
Garnish (howerver you like):
- vegan brioche burger buns
- vegan Mayo
- lettuce
- arugula
- guacamole
- tomato
- red onion
- ketchup

❶ Sauté onion until translucent, add garlic and sauté until it just starts to brown.
❷ Roughly blend walnuts, chickpeas, oats and the cooked beets. Add the mixture to a bowl.
❸ Add all the other ingredients to the bowl and mix until well combined.
❹ Form the patties and fry them in a little bit of olive oil. You can also bake the patties in the oven at 200°C for 30-40 minutes.
❺ Build your burger with whatever toppings you like and enjoy!
