Tostada de Ceviche
16 oz. Swai fillets. You can also use aji, tilapia, cod, swordfish
7/8 lemons
1 tsp crushed red pepper
2 large or 3 medium tomatoes
½ bunch cilantro (rinse)
1 tsp salt
Hot sauce – Tapatio
Mayonnaise
Avocados
Limes
Tostadas
Cut fish in to bite sizes. Squeeze your lemons down to get juice. Add juice to bowl of fish. Cut up tomatoes in to tiny pieces and mince up your cilantro. Add both tomatoes and cilantro to bowl of marinating fish. Add 1 tsp salt, 1 tsp red crushed peppers. Stir all ingredients together and let sit for 5 minutes.
Put mayonnaise on your tostadas and place the fish mixture on tostada. Salt to taste and add a squeeze of lime, sprinkle tapatio and add your avocado.
