We headed into the Scandolaro Hills near Foligno in Umbria, Italy to meet with farmer and olive oil producer, Marco Viola. Once we managed to stop gazing across the spectacular views, we chatted with Marco about why his land is ideal for growing olives, and about the efforts he makes to maintain the quality of his olive oils.
