Vinegar (of any kind) is made in a two-step process, a process related to how alcohol is made. The first step of the process exposes apples (or rice) to yeast, which ferments the sugars and turns them into alcohol. For the second step, bacteria are added to the alcohol, which further ferment the alcohol and turn it into what we know as acetic acid...the magic ingredient in ACV or rice vinegar that make them so healthy to consume.
In French, the word “vinegar” actually means “sour wine.”
