The quiet waters of the Seto Inland Sea is a cradle for the vast amount of fish used for broth in the many recipes that make Shikoku cuisine so flavorful and delicious. The fishermen's daily catch provides sliced bonito (skipjack tuna) broiled over straw fire until it is grilled.
