Bhandare wale aloo ki sabji🥔😋
Who doesn’t love bhandare wale aloo ki sabji? If you grew up in north India, you know what I am talking about. Bhandare ka khana is made using basic ingredients, but the taste of each and every dish is top-notch. No onion, no garlic, this aloo recipe tastes different than your regular rase wale aloo, all the magic in that secret masala which I am going to tell you here.
Let’s see the recipe.
(Ingredients for secret masala)
1 bay leaf
1 black cardamom
3 green cardamom
1 cinnamon stick
7-8 black peppercorns
2-3 cloves
4 Kashmiri dry red chillies
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp fennel seeds
1/2 tsp carom seeds
1 tsp Kasturi methi
(Ingredients for the gravy)
4 boiled potatoes
4 tsp oil
Pinch of hing
1/2 tsp cumin seeds
2 green chillies
1 tsp ginger, grated
4 tomatoes, puréed
Salt to taste
Pinch of sugar
1/4 tsp black salt
1/2 tsp Red Chilli powder
1/2 tsp coriander powder
1/2 tsp Turmeric powder
1/2 tsp amchoor powder
Water as required
Fresh coriander leaves
Method -
1. Roast all the ingredients above mentioned under masala for aloo sabji
2. Grind into powder, and store for later use
3. Add oil in Kadai, once the oil is hot, add hing and cumin seeds
4. Add green chillies, ginger and tomatoes and cook until tender
5. Now add salt, sugar add all the powdered spices. Cook all the masalas for a min or 2.
6. Add black salt, roasted masala, boiled potatoes, and 2 cups hot water depending on the gravy consistency you need
7. Cover and let it cook for 5-7 mins. Add fresh coriander leaves and it’s done!
Traditionally it is served with kachori, but you can have it with poori, parantha or even rice, that’s how I like it :)
