Pan Roast Chicken
Ingredients for masala preparation:
Coriander seeds (roasted) 1 tbsp
Cumin seeds (roasted) 1 tbsp
Black peppercorns (roasted) 1 tbsp
Cloves 3-4
Ingredients for green cream sauce:
Green coriander (chopped) 1 cup
Green chilies (Chopped) 2-3
Salt 1/2 tsp
Water 1/4 cup
Cream 1 cup
Mayonnaise 1/4 cup
Green chutney 2-3 tbsp
Ingredients for Pan Roast Chicken:
Chicken leg and thigh piece 3
Yogurt 1 cup
Prepared masala 3 tbsp
Salt 2 tsp
Butter 1/4 cup
Oil 1/4 cup
Directions for masala preparation:
1. On a pan roast coriander seeds, cumin seeds, black peppercorns, cloves for a minute.
2. In a grinder add roasted coriander seeds, cumin seeds, black peppercorns, cloves and grind into fine powder. Your masala is ready. Set aside.
Directions for Green cream sauce preparation:
3. In a jar add green coriander, green chilies, salt, water and blend well into smooth paste. Your green chutney is ready.
4. In a bowl add Cream, mayo, prepared green chutney and mix well. your green cream sauce is ready. Set aside.
Directions for Pan Roast Chicken Preparation:
5. Take chicken legs and place cuts on them. Marinate them in yogurt, prepared masala and salt for 30 minutes.
6. In a grill pan heat oil and grill chicken pieces on it for 3-4 minutes or until 80% done.
7. In a pan heat butter and transfer the grilled chicken pieces on it. Cook each side until chicken is cooked through.
8. Your Pan Roast chicken is ready. Serve it with green cream sauce and enjoy.
