These are the most INCREDIBLE, gooey and decadent fudge brownies you'll ever try. As a pastry chef I've tried hundreds of brownie recipes in search of the ultimate fudgy brownie. I've used this recipe in restaurants, cafes and feeding the insatiable chocoholics I love. Look no further. This is the only brownie recipe you'll ever need.
Recipe:
225g Unsalted butter, melted
75g Cocoa powder
200g Brown sugar
200g Caster sugar
3 large eggs, room temp
1 tsp Course salt ( I used fleur de sel but flakey is good too.
If using table salt use only 1/2 tsp)
30ml espresso OR 1 tsp instant powder
1 Tbsp Vanilla extract or paste
120g Plain all purpose flour, sifted
260g good quality chocolate, preferably couverture(contains cocoa butter) I use "Callebaut 53% dark callets”
Optional: PB&J
3/4 cup Rasperries
2 big Tblsp peanut butter swirled through.
